Yacon

Looks like a sweet potato but actually these are  Yacon/yakun (Smallanthus sonchifolius). It is a perennial herb in the sunflower family native to the Andes Mountains in South America. It produces large, edible underground tubers often called the "Peruvian ground apple".

Composed of about 75% water and rich in fructooligosaccharides (FOS) and inulin. FOS is a prebiotic fiber that the body does not fully digest, meaning it sweetens food without causing major blood sugar spikes.
